The 'petit' here refers only to its size. The restaurant seats just 40 people, and another 12 on the terrace. You should therefore book beforehand. The chef produces seasonal market cuisine brilliantly. He adds a subtle touch of creativity that you can recognise if you are a regular. Take for example the egg. It will be served in a casserole with morel mushrooms in cream, spinach, and candied tomatoes. He will then reinvent it poached with toasted brioche in piperade. The calf's head is breaded before being served with shallot vinaigrette, and the guinea fowl with chestnut truffle is accompanied by deliciously fluffy mashed potatoes. Dessert is a trip down memory lane with French toast or rice pudding and salted milk caramel, and raspberry crème brûlée, sprinkled with blond sugar.
