La Dégustation Bohême Bourgeoise owes its reputation to the creativity of chef Oldřich Sahajdák, who revisits traditional Czech dishes via his inspired take on French cuisine.
Very much like Alain Passard, the chef of Arpège in Paris whom he admires, Sahajdák grows his own organic produce. Less than 500 metres from the Old Town Square, the restaurant pairs smoked beef tongue with vinegary shallots and puréed chickpeas, oyster mushrooms with horseradish sauce and tapioca pearls.
The decor is sober but chic, the wine selection serious. The bill reflects La Dégustation's status as one of the only Michelin-starred restaurants in the capital.
