In the land of the goat and the lobster, talented chef Alexandre Fabris offers you a gustatory journey that reveals all the flavours of Mediterranean cuisine.

At the gates of Calvi, overlooking the Bonifato Valley, this old Genoese estate, entirely renovated by Jean-Baptiste Ceccaldi now houses the luxurious and popular La Signoria resort. This charming address welcomes its guests in a discreet and elegant atmosphere.

In the shade of the starred restaurant's large cream-coloured parasols, the tables on the terrace face the majestic mountainous landscape. And in the ochre and beige indoor dining room lies a huge fireplace. Everything is set for you to enjoy the infinitely refined dishes of chef Alexandre Fabris: swordfish pastilla in cardamom, cuttlefish ink sauce linguini with squids, or the venison filet marinated in Corsican wine then roasted, served with bayberry sauce… The sommelier will help you pair your meal with the best Corsican wines stored in the cellar. End on a sweet note with figs from the maquis, roasted in olive oil and served with a light Madagascar vanilla cream.

The establishment is closed seasonally, from November 5 to March 31.
