The garden of this old townhouse opens onto a romantic patio, interspersed with a few colourful iron-wrought tables and chairs, perfect to sip on a drink. But truth be told, it is inside the house that everything happens. With stripped-down design and a cosy atmosphere, Ambrosia is a restaurant that looks like a French bistro with a Chilean twist. Regularly making the 50 best Latin American restaurants lists, the establishment is first and foremost a family affair: father and son on table service, the mother at the register and the daughter, Carolina Bazàn, in the kitchen. The chef trained with Gregory Marchand in Paris and kept a few French inspirations in her recipes, based on Chilean products – organic most of the time. The menu changes daily, depending on deliveries, but you may be lucky enough to try venison with mushroom purée, the conger and mash cauliflower in ink, or the fillet of duck breast with a quince purée.
